Hopefully, I will be going to university next September. While I can't wait for the socialising, living independently and getting a degree, I was absolutely dreading having to cook for myself. So, I made an agreement with my mum that I would cook at least once a week for her and her partner (and myself, obviously). I do everything from choosing what I'm cooking to going and buying it and then actually cooking it and plating up. My first attempt was last week and I went with a very basic chilli con carne, which I thought would be the best way to start. This week, I cooked a cod and chorizo stew...
In my opinion, the cod and chorizo stew was delicious! I served it with some Mexican chilli rice and a garnishing of parsley and the flavours all seemed to come together. I love chorizo so would have no issues there and the fish seemed more meaty than I initially expected, which for me was a bonus. My only problem was that I'm not very good at multitasking, so I had to have a bit of assistance when it came to stirring the onions while cutting up the chorizo. I will leave a link to the recipe below as it was so easy to do and took less than half an hour which is absolutely ideal when my mum gets back from work so late. I should hopefully be uploading my next meal next week, and maybe I'll do something more advanced!
